Pyruvate does not cause the dental plaque pH to go down because it is quickly converted to lactate by cariogenic bacteria. If pyruvate were not converted to lactate the bacteria would not generate as much ATP from glucose and fructose and toxic levels of NADH would build up in the bacterial cells.
